How to make it

Achari Aloo Sabzi Recipe (Plant-Based)

Ingredients:

  1. For the Sabzi:4 medium-sized potatoes, peeled and cubed
  2. 2 tbsp oil (mustard oil is preferred)
  3. 1 tsp cumin seeds
  4. 1 tsp fennel seeds
  5. 1 tsp mustard seeds
  6. 1 tsp nigella seeds (kalonji)
  7. 2-3 green chilies, slit
  8. 1 medium onion, finely chopped
  9. 1 tsp ginger-garlic paste
  10. 1 tsp turmeric powder
  11. 1 tsp red chili powder
  12. 1 tsp coriander powder
  13. Salt to taste
  14. 1 tbsp lemon juice
  15. 1/4 the cup plant yogurt or cashew paste.
  16. Fresh coriander leaves for garnish

Instructions:

  1. Preparation:
  2. Boil the cubed potatoes until they are tender. Drain and set aside. or Toss on the pan as shown in the video until 80% cooked.
  3. Add the bell pepper, onion along with garlic and chilies toss for another 4 minutes. Take it off the heat.
  4. Cooking the Spices:
  5. Heat oil in a separate pan. Add cumin seeds, fennel seeds, mustard seeds, and nigella seeds. Let them splutter.
  6. Add the chopped onions. Sauté until the onions turn golden brown.
  7. Adding Potatoes:
  8. Stir in the ginger-garlic paste and cook for a minute.
  9. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  10. Add the potatoes & other veggies and toss to coat them with the spices.
  11. Additionally can add plant yogurt or Cashew paste for more flavours.
  12. Finishing Touches:
  13. Cook for an additional 5-7 minutes, stirring occasionally until the potatoes are well combined with the spices.
  14. Drizzle lemon juice over the sabzi and mix gently.
  15. Garnish with fresh coriander leaves before serving.
