Banarasi Rasse Wali Aloo Sabzi
Ingredients
- Potatoes: 4 medium, boiled and diced
- Oil: 2 tablespoons
- Cumin seeds: 1 teaspoon
- Green Chillies: 2-3 chopped
- Hing (asafoetida): a pinch
- Tomato: 1 cup pureed
- Turmeric powder: 1/2 teaspoon
- Red chili powder: 1 teaspoon
- Garam masala: 1/2 teaspoon
- Salt: to taste
- Water: 2 cups
- Fresh coriander: for garnishing
Instructions
- Tempering: Heat the oil in a pan. Add cumin seeds and hing. Allow them to splutter.
- Spices: Add turmeric powder, red chili powder, and salt. Mix well.
- Vegetables: Add pureed tomatoes, and once cooked, add the boiled potatoes and stir gently.
- Simmer: Pour in water and let it simmer for 10-15 minutes. Adjust consistency.
- Garnish: Sprinkle garam masala and fresh coriander before serving.
Urad Dal Kachori
Ingredients
- Urad dal: 1 cup, soaked for 4-5 hours
- Wheat flour: 2 cups
- Oil: 2 tablespoons (for dough) + for frying
- Cumin seeds: 1 teaspoon
- Ginger: 1 inch, grated
- Green chilies: 2, finely chopped
- Salt: to taste
- Water: as required
Instructions
- Dough: Mix wheat flour, oil, and salt. Knead into a soft dough with water. Rest for 30 minutes.
- Filling: Add cumin seeds, ginger, green chilies, chilli powder, garam masala, hing, and salt.
- Assemble: Grind the urad dal mixture coarsely. Take a small ball of dough, flatten it, fill it with urad dal mixture, and seal it.
- Fry: Heat oil in a pan. Fry kachoris until golden brown.
