Bhogar Khichuri

How to make it

Ingredients

  1. 1 cup Gobindo Bhog rice (or any short-grain rice)
  2. 1/2 cup moong dal (split yellow lentils)
  3. 1-2 tbsp plant-based ghee (or oil )
  4. 1 bay leaf
  5. 2-3 green cardamom pods
  6. 1-2 cloves
  7. 1-inch cinnamon stick
  8. 1 tsp cumin seeds
  9. 1-2 green chilies (slit)
  10. 1/2 inch ginger, peeled and chopped
  11. 1 medium potato (cubed)
  12. 1/2 cup peas (fresh or frozen) and any other vegetable of your choice. (Carrot, beans, cauliflower)
  13. 1/2 tsp turmeric powder
  14. Salt to taste
  15. Water (4-5 cups, adjust as needed)
  16. Garnish: Fresh coriander leaves

Instructions

  1. Preparation:
  2. Dry roast the rice and dal in a pan.
  3. Wash and soak the rice and moong dal together for about 30 minutes. Drain and set aside.
  4. Cooking:
  5. In a large pot, heat oil/ vegan ghee and add bay leaf, cardamom, cloves, cinnamon, and cumin seeds. Sauté until fragrant.
  6. Add the green chilies and ginger. Cook until it turns aromatic.
  7. Add the cubed potatoes and peas, cauliflower, beans and carrot, and sauté for a few minutes.
  8. Stir in the soaked rice and dal, along with turmeric powder, garam masala, and salt. Mix well.
  9. Pour in water, bring to a boil, then reduce the heat and cover. Cook for about 20-25 minutes, stirring occasionally, until the rice and dal are cooked and the mixture is creamy. OR Pressure cook for 2 whistles.
  10. Serve:
  11. Garnish with fresh coriander leaves. Serve hot with pickle or papad on the side.
