Recipe for Buckwheat Bread
Ingredients
- 2 cups raw buckwheat groats
Instructions
- Soaking:
- Rinse the buckwheat thoroughly under cold water.
- Soak the rinsed buckwheat in plenty of water for 12 hours. This helps soften the grains and makes them easier to blend.
- Draining:
- After 12 hours, drain the soaked buckwheat and DO NOT rinse.
- Blending:
- Place the soaked buckwheat in a blender. Add 1 cup of fresh water (adjust for consistency) and blend until smooth. Aim for a thick, pancake-like batter.
- Fermenting:
- Transfer the batter to a clean glass or ceramic bowl. Cover it loosely with a cloth and let it sit at room temperature for another 12 hours. This fermentation process enhances flavors and adds beneficial probiotics.
- Baking:
- Preheat your oven to 180°C (350°F).
- Line a baking dish with parchment paper or lightly grease it. Pour the fermented batter into the dish and spread it evenly.
- Bake:
- Bake in the preheated oven for 45 minutes or until the top is firm and lightly golden.
- Cooling:
- Let the bread cool for a few minutes before slicing.
