Ingredients

Instructions
Preparing Chole:
1. Soak Chickpeas: If using dried chickpeas, soak them overnight in water. Drain and rinse.
2. Cook Chickpeas: In a pressure cooker, add soaked chickpeas, water, and salt. Cook for about 3-4 whistles until soft. If using canned chickpeas, rinse them and set aside.
3. Make the Masala:
- In a pan, heat oil and add cumin seeds.
- Once they splutter, add chopped onions and green chilies. Sauté until golden brown.
- Add ginger-garlic paste and cook for a minute.
- Stir in the tomato puree and cook until the oil separates.
- Add turmeric, coriander powder, and garam masala. Mix well.
4. Combine: Add cooked chickpeas to the masala. Adjust water for desired consistency, and simmer for 10-15 minutes. Garnish with chopped coriander.
Preparing Bhature
1. Make Dough:
- In a bowl, mix all-purpose flour, plant yogurt, sugar, baking powder, and salt.
- Knead into a soft dough, adding water as needed. Cover and let rest for at least 30 minutes.
2. Roll and Fry:
- Divide the dough into small balls. Roll each ball into a circle about 6 inches in diameter.
- Heat oil in a deep frying pan. Once hot, carefully slide in the rolled dough.
- Fry until golden and puffed up on both sides. Remove and drain on paper towels.
Serving
- Serve hot Chole with fluffy Bhature. Enjoy with sliced onions, pickles, and plant yogurt!
