Ingredients

Instructions

  1. Prepare the Greens:
  2. Blend spinach, mint, and coriander leaves with a little water to make a smooth paste. Set aside.
  3. Cook the Rice:
  4. Rinse basmati rice until water runs clear. Soak it for 30 minutes and drain.
  5. Sauté the Vegetables:
  6. In a large pot, heat oil or ghee. Add cumin seeds, bay leaf, peppercorns, cloves, and cardamom. Sauté until fragrant.
  7. Add sliced onions and green chilies, cooking until onions are golden brown.
