Dal Methi Maharashtrian Style Bhaji with yellow moong and fresh vatan.
Ingredients
For the Vatan
- 1 cup fresh grated coconut
- 5-6 dried red chilies (adjust to taste)
- 1 tsp cumin seeds
- 4-5 cloves of garlic
- 2 tbsp roasted sesame seeds
- 2 tbsp peanuts
For the Dal Methi Bhaji
- 1 cup yellow moong dal (soaked for 30 minutes)
- 1 cup fresh methi leaves (fenugreek), chopped
- 1-2 tbsp oil (preferably vegetable or mustard oil)
- 1 tsp cumin seeds
- 1 medium onion, chopped
- 1/2 tsp turmeric powder
- Salt to taste
- 1-2 tomatoes, chopped
- Water as needed
Instructions
Prepare the Vatan
- Dry Roast: In a pan, dry roast the grated coconut, red chilies, cumin seeds, garlic, sesame seeds, and peanuts until golden brown and fragrant.
- Make Paste: Let the mixture cool and then grind it to a coarse paste using a little water if necessary. Set aside.
Prepare the Dal Methi Bhaji
- Heat Oil: In a separate pan, heat oil and add cumin seeds. Let them splutter.
- Add Onions: Add the chopped onions and sauté until translucent.
- Add Spices: Stir in turmeric powder and salt, mixing well.
- Add Tomatoes: Once the onions are cooked, add the chopped tomatoes and cook until they soften.
- Combine Ingredients: Add the soaked yellow moong dal and chopped methi leaves to the pan. Mix everything well.
- Incorporate Vatan: Add the coarse vatan paste to the mixture.
- Cooking: Cover the pan and cook on low flame. If needed, add a little water or place a bowl of water in the pan to allow the steam to cook the dal.
Serving
Serve hot with roti or rice, garnished with chopped coriander if desired. Enjoy the rich flavors of this Maharashtrian dish!
