Ingredients

Hummus

  1. 1 cup shelled edamame (frozen ok), thawed
  2. 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  3. 2–3 cloves garlic
  4. 1/4–1/3 cup tahini (start with 1/4, add more to taste)
  5. 1/4 cup extra-virgin olive oil (plus more to finish)
  6. 2 tbsp lemon juice (or more to taste)
  7. 1 tsp ground cumin (optional)
  8. 1/2 tsp smoked paprika (optional)
  9. 1/2–1 tsp salt, to taste
  10. 2–6 tbsp cold water (to blend to your preferred thickness)

To serve

  1. Toasted bread slices
  2. Quick pickled onion (recipe below)
  3. Fresh herbs (parsley, cilantro, dill, or a mix)
  4. Optional: chili flakes, extra EVOO, or black pepper

Quick Pickled Onion

  1. 1/2 red onion, thinly sliced
  2. 1/2 cup water
  3. 1/4 cup apple cider vinegar (or white vinegar)
  4. 1 tbsp sugar (optional but helps; reduce if you want it less sweet)
  5. 1/2 tsp salt

Mix vinegar + water + salt + (optional) sugar, pour over onions. Rest at least 15 minutes (up to a day).

Instructions

  1. Cook/blanch edamame (recommended for best texture):
  2. Boil edamame 2–3 minutes, drain, then cool slightly.
  3. Blend hummus:
  4. Add edamame, chickpeas, garlic, tahini, lemon juice, cumin (if using), salt, and EVOO to a food processor.
  5. Stream in water:
  6. Blend, adding cold water 1 tbsp at a time until smooth and spreadable.
  7. Taste & adjust:
  8. Add more lemon for brightness, more salt for seasoning, or a drizzle of EVOO for richness.
  9. Assemble toast:
  10. Spread hummus on toasted bread. Top with pickled onions and fresh herbs. Finish with a drizzle of EVOO and optional chili flakes.
