Moringa Sabzi (Vegetable) + Moringa Dal Recipes

1) Moringa Sabzi (Sabzi) — Recipe

Ingredients

  1. Fresh moringa leaves (washed)
  2. Onion (1 medium, finely chopped)
  3. Garlic (3–4 cloves, chopped/crushed)
  4. Green chilies (1–2, chopped)
  5. Salt (to taste)
  6. Roasted peanuts (1/4–1/3 cup)
  7. Optional: 1–2 tsp oil, turmeric/red chili powder (as you like)

Steps

  1. Wash moringa leaves well. Remove any thick stalks if needed.
  2. Finely chop the moringa leaves.
  3. In a pan, heat a little oil (optional).
  4. Add onion and sauté until slightly golden.
  5. Add garlic and green chilies, sauté for 30–60 seconds.
  6. Add the chopped moringa leaves and cook covered 5–8 minutes (stir occasionally) until they soften.
  7. Add salt and any optional spices.
  8. Stir in roasted peanuts at the end (so they don’t get too crushed).
  9. Cook 1–2 minutes and turn off heat. Serve hot.

2) Moringa Dal (Dal) — Recipe

How it differs from sabzi: You do the same base process, then add boiled lentils and simmer.

Ingredients

  1. Moringa leaves (washed and finely chopped)
  2. Onion, garlic, green chilies
  3. Salt
  4. Roasted peanuts (optional, but nice)
  5. Lentils (moong masoor/tur/your choice)
  6. Optional: turmeric, red chili powder, a little oil/ghee

Steps

  1. Boil lentils until soft. Drain some water (or keep a little) depending on how thick you like dal.
  2. In a pan, follow the same process as sabzi:
  3. sauté onion
  4. add garlic + green chilies
  5. add chopped moringa leaves, cook until soft
  6. Add the boiled lentils to the pan.
  7. Simmer 8–12 minutes so flavors mix.
  8. Add salt (and optional spices). If dal is too thick, add a splash of water.
  9. Optional: stir in roasted peanuts near the end.
  10. Serve with rice/roti.
