How to make it
Ingredients
Main
- Jawas seeds: 1 cup (cleaned)
- Dry roasted red chilies: 6–10 (adjust heat)
- Garlic: 8–12 cloves
- Dry coconut (copra), grated: ½–¾ cup
- Flaxseeds (ground or roasted): 2 tbsp
- Sesame seeds: 2 tbsp
Spices & sour
- Tamarind: 2–3 tbsp pulp or (if using tamarind concentrate) as needed
- Kashmiri red chili powder: 1–2 tsp (for color)
- Cumin seeds: 1 tsp
- Curry leaves: 8–12
- Salt: to taste
- Oil: 1–2 tsp (optional, only for tempering/roasting)
Step-by-step method
Step 1: Roast the seeds (for better flavor)
- Dry roast jawas seeds in a pan on medium heat for 4–7 minutes until aromatic.
- Cool and keep aside.
Step 2: Roast/prepare the remaining dry ingredients
In the same pan (or separate), roast:
- Dry red chilies: 30–45 seconds (don’t burn)
- Cumin seeds: 30–60 seconds
- Sesame seeds: 1–2 minutes
- Flaxseeds: roast 1–2 minutes if not already groundTip: For best digestion/texture, lightly roast or grind after roasting.
Step 3: Roast dry coconut + curry leaves (optional but recommended)
- Roast dry coconut for 2–4 minutes until lightly golden.
- Add curry leaves for 10–20 seconds just to crisp (they burn fast).
Step 4: Grind
- In a grinder, add:
- roasted jawas
- roasted dry red chilies
- garlic
- roasted dry coconut
- flaxseeds
- sesame seeds
- cumin seeds
- Add:
- tamarind pulp
- Kashmiri chili powder
- salt
- Grind to a coarse paste.
- Add very little water only if needed (start with 1–2 tbsp).
- Goal: thick chutney, not watery.
Step 5: Final temper (tadka) for aroma
- Heat 1–2 tsp oil in a small pan.
- Add a pinch of cumin (optional), then lightly fry fresh curry leaves (5–10 seconds).
- Mix tadka into the chutney.
Step 6: Rest & serve
- Rest 10 minutes. Flavors settle and become richer.
- Serve with snacks, dosa/idli, or as a side with rice.
Storage
- Refrigerate in a clean container: up to 3–4 days
- For longer shelf life: keep it dry-thick and minimize added water.
Nutritional value (approx.)
