- Preparation: Soak and cook the Raw Jackfruits until soft. Marinate them with Onion, plant yogurt, and spices. (Marinate 30 minutes)
- Frying: Sauté onions until golden brown and add the marinated Jackfruits and spices.
- Layering: In a pot, layer the sautéed Jackfruit mixture with partially cooked basmati rice, adding herbs and spices between the layers.
- Dum Cooking: Seal the pot and cook on low heat (dum) to allow flavors to meld, usually for 30-40 minutes.
For the Kathal (Jackfruit) Marinade:
- 500 grams raw kathal (jackfruit), cut into pieces
- 1 cup plant yogurt
- 2 tablespoons ginger-garlic paste
- 2-3 green chilies, slit
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 tablespoon garam masala
- Salt to taste
- 2 tablespoons oil
For the Rice:
- 2 cups basmati rice
- 4 cups water
- 2-3 green cardamom pods
- 4-5 cloves
- 1-2 bay leaves
- 1 stick cinnamon
- Salt to taste
For Layering:
- 1 large onion, thinly sliced and fried until golden brown
- Fresh mint leaves, chopped
- Fresh coriander leaves, chopped
- 2-3 tablespoons ghee (clarified butter)
Instructions
Step 1: Semi-Cook the Kathal (70%)
1. In a separate pan, boil the kathal and cook until it's tender (about 10-15 minutes).
Step 2: Marinate the Kathal
1. In a bowl, mix onion, yogurt, ginger-garlic paste, green chilies, red chili powder, turmeric powder, garam masala and salt in a bowl.
2. Add the kathal pieces and coat them well. Let it marinate for at least 1 hour (or overnight in the refrigerator for better flavor).
Step 3: Roast the Kathal
- Cook the Kathal in a hot skillet until the raw smell of onion, ginger garlic paste disappears and it starts releasing oil.
Step 4: Prepare the Rice
1. Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes and then drain.
2. Bring 4 cups of water to a boil in a pot. Add the soaked rice, cardamom, cloves, bay leaves, cinnamon, and salt.
3. Cook until the rice is 70% cooked (about 5-6 minutes). Drain and set aside.
Step 5: Layer the Biryani
1. In the same pot with the kathal, layer half of the partially cooked rice.
2. Sprinkle some fried onions, mint, and coriander. Drizzle some ghee.
3. Add the remaining rice on top, followed by more fried onions, mint, and coriander. Drizzle the remaining ghee.
Step 5: Dum Cooking
1. Cover the pot tightly with a lid. You can seal the edges with dough or a kitchen towel to trap the steam.
2. Cook on low heat for about 25-30 minutes (this is called 'dum').
3. Once done, remove from heat and let it rest for 10 minutes before opening.
Step 6: Serve
- Gently fluff the biryani with a fork. Serve hot with raita or salad.
