How to make it
Ingredients:
- 1 cup gram flour (besan)
- 1 cup plant buttermilk (or a mixture of yogurt and water)
- ½ tsp turmeric powder
- 1 tsp ginger paste
- 1 tsp green chili paste (adjust to taste)
- ½ tsp salt (adjust to taste)
- 1 tsp oil (for greasing)
For Tempering
- 1 tbsp oil
- ½ tsp mustard seeds
½ tsp sesame seeds
- ½ tsp cumin seeds
- 10-12 curry leaves
- 2 tbsp grated coconut (optional)
- 2 tbsp chopped coriander leaves (for garnish)Instructions
1. Prepare the Batter:
- In a mixing bowl, combine gram flour, buttermilk, turmeric powder, ginger paste, green chili paste, and salt. Whisk well to eliminate lumps. The batter should be smooth and pourable.
2. Cook the Batter:
- In a non-stick pan, pour the batter and cook on medium heat. Stir continuously to avoid lumps. Cook until the mixture thickens and starts to leave the sides of the pan (about 8-10 minutes).
3. Spread the Mixture:
- Grease a flat surface (like a marble countertop or a large plate) with oil. Pour the cooked batter onto the surface and spread it evenly with a spatula to form a thin layer. Let it cool for a few minutes.
4. Roll the Khandvi:
- Once cooled, cut the spread batter into strips (about 2 inches wide). Carefully roll each strip into a tight cylinder.
5. Prepare the Tempering:
- In a small pan, heat oil for tempering. Add mustard seeds and cumin seeds. When they splutter, add curry leaves and sauté for a minute.
6. Serve:
- Arrange the rolled Khandvi on a serving plate. Drizzle the tempering over them. Garnish with grated coconut and chopped coriander leaves.
