Vegan Kottu Parota Recipe

Ingredients

  1. 4 vegan parotas (store-bought or homemade)
  2. 1 cup mixed vegetables (Optional: carrots, bell peppers, cabbage)
  3. 1 onion, finely chopped
  4. 2-3 green chilies, chopped (adjust to taste)
  5. 1 teaspoon curry powder
  6. 1 tablespoon oil (coconut or vegetable)
  7. Fresh coriander for garnish
  8. Salt and pepper to taste

Instructions

  1. Prepare the Parota: If using frozen parotas, thaw them. Cut each parota into small strips.
  2. Sauté the Vegetables: Heat oil in a large pan or griddle over medium heat. Add onions and green chillies. Sauté until the onions are translucent.
  3. Add Vegetables: Stir in mixed vegetables (If using) and tomatoes. Cook until the vegetables are tender.
  4. Season: Add curry powder, salt, and pepper. Mix well.
  5. Combine with Parota: Add the chopped parota strips to the pan. Stir-fry everything together for a few minutes until well combined.
