Vegan Kottu Parota Recipe
Ingredients
- 4 vegan parotas (store-bought or homemade)
- 1 cup mixed vegetables (Optional: carrots, bell peppers, cabbage)
- 1 onion, finely chopped
- 2-3 green chilies, chopped (adjust to taste)
- 1 teaspoon curry powder
- 1 tablespoon oil (coconut or vegetable)
- Fresh coriander for garnish
- Salt and pepper to taste
Instructions
- Prepare the Parota: If using frozen parotas, thaw them. Cut each parota into small strips.
- Sauté the Vegetables: Heat oil in a large pan or griddle over medium heat. Add onions and green chillies. Sauté until the onions are translucent.
- Add Vegetables: Stir in mixed vegetables (If using) and tomatoes. Cook until the vegetables are tender.
