Ingredients

- 1/2 tsp kasuri methi (dried fenugreek leaves)

Instructions
- Prepare the Base:
- Add diced onion, tomato, cashew, ginger, garlic, and green chillies, and pressure cook up to 2 whistles.
- Pressure cook the soaked chickpea.
- Cool the onion and tomato mixture.
- Sauté the minced onion for 1-2 minutes, or until golden brown.
- Grind the onion and tomato mixture into a paste and then add the mixture to the golden onion pan for a few minutes until the oil separates.
- Add Spices and Chole:
- Add coriander powder, turmeric, and salt. Mix well.
- Add the boiled chickpeas and stir to combine. Cook for another 5 minutes.
- Make it Creamy:
- Adjust the consistency and mix well. Allow it to simmer for another 5-10 minutes.
- Add garam masala and kasuri methi. Adjust seasoning and sweetness if needed.
- Serve:
- Garnish with fresh coriander and a drizzle of vegan butter if desired.
- Serve hot with rice or bread (roti, naan, or paratha).
