Rajasthani Besan and Palak Sabzi Recipe
Ingredients:
- For the Sabzi: 2 cups spinach (palak), washed and chopped
- 1 cup besan (gram flour)
- 1 medium onion, finely chopped
- 2-3 green chilies, chopped
- 1 tsp mined garlic
- ½ tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp red chili powder
- 1/2 tomato chopped
- 1 tsp coriander powder
- Salt to taste
- 2-3 tbsp oil
- Fresh coriander leaves for garnish

- Preparation:
- Wash and chop the spinach leaves.
- Cooking:
- Heat oil in a pan. Add cumin seeds and let them splutter.
- Stir in minced garlic and green chilies.
- Add chopped onions and sauté until they turn golden brown.
- Add the chopped spinach and cook until wilted. Add tomatoes and cook for 2-3 minutes.
- Sprinkle turmeric, red chili powder, coriander powder, and salt. Mix well.
- Reduce the heat and gradually add the besan (Chickpea flour), stirring continuously to avoid lumps.
- Cook for about 5-7 minutes, allowing the besan to cook thoroughly, and the sabzi thickens.
- Garnishing:
- Garnish with fresh coriander leaves. Serve hot with roti or rice.
