Rajasthani Besan and Palak Sabzi Recipe

Ingredients:

  1. For the Sabzi: 2 cups spinach (palak), washed and chopped
  2. 1 cup besan (gram flour)
  3. 1 medium onion, finely chopped
  4. 2-3 green chilies, chopped
  5. 1 tsp mined garlic
  6. ½ tsp cumin seeds
  7. ½ tsp turmeric powder
  8. 1 tsp red chili powder
  9. 1/2 tomato chopped
  10. 1 tsp coriander powder
  11. Salt to taste
  12. 2-3 tbsp oil
  13. Fresh coriander leaves for garnish

  1. Preparation:
  2. Wash and chop the spinach leaves.
  3. Cooking:
  4. Heat oil in a pan. Add cumin seeds and let them splutter.
  5. Stir in minced garlic and green chilies.
  6. Add chopped onions and sauté until they turn golden brown.
  7. Add the chopped spinach and cook until wilted. Add tomatoes and cook for 2-3 minutes.
  8. Sprinkle turmeric, red chili powder, coriander powder, and salt. Mix well.
  9. Reduce the heat and gradually add the besan (Chickpea flour), stirring continuously to avoid lumps.
  10. Cook for about 5-7 minutes, allowing the besan to cook thoroughly, and the sabzi thickens.
  11. Garnishing:
  12. Garnish with fresh coriander leaves. Serve hot with roti or rice.
