Pav Bhaji with Vegetables, Lentils, and soy granules/edamame Recipe
Ingredients
For the Bhaji:
- 1 cup mixed vegetables (potatoes, carrots, peas, cauliflower)
- 1/2 cup edamame, green peas (shelled)
- 1/2 cup soy granuels
- 1/2 cup soaked lentils (red or green)
- 1 onion, finely chopped
- 2 tomatoes, pureed/ chopped
- 1 tablespoon ginger-garlic paste
- 2 tablespoons pav bhaji masala (available in stores)
- 2 tablespoons vegan butter (or oil for a lighter version)
- Salt to taste
- Fresh coriander leaves, chopped (for garnish)
- Lemon wedges (for serving)
For the Pav:
- Vegan 4 pav (bread rolls)
- 2 tablespoons vegan butter (for toasting)

Instructions
- Prepare the Vegetables:
- Chop all the vegetables like cauliflower, carrot, and beans.
- Wash edamame and green peas.
- Wash lentils thoroughly and soak them for an hour.
- Cook the Bhaji:
- In a pressure cooker, heat the vegan butter/ oil. Add the chopped onions and sauté until translucent.
- Add the ginger-garlic paste and green chilies. Sauté for another 2 minutes.
- Stir in the pureed tomatoes and cook until the oil separates.
- Add the Indian basic spices and pav bhaji masala.
- Add the washed & chopped vegetables along with lentils and salt.
- Mix well and add 2 cups of water. Close the pressure cooker and let that cook up to 3 whistles.
- Garnish with dry fruits, nuts, and cilantro.
- Toast the Pav:
- In another pan, melt plant-based butter and toast the pav until golden brown on both sides.
- Serve:
- Serve the bhaji hot with the toasted pav, garnished with onions and lemon wedges.

Notes
- You can adjust the spice level according to your preference.
- For a vegan version, use oil instead of butter for both bhaji and pav.
- Feel free to add more vegetables like cauliflower or zucchini based on availability.
