Coconut Oil (1 tbsp, approx. 15g)

Instructions

Prepare the Quinoa
Roast the Quinoa: Dry roast 80g of quinoa.
Stir frequently for about 1-2 minutes until the quinoa begins to pop and turns golden brown.
Remove from heat and let cool.
Melt the Chocolate
Double Boiler Method:Fill a pot with a few inches of water and bring to a simmer.
Place a heatproof bowl on top of the pot, ensuring it doesn’t touch the water.
Break the dark chocolate into pieces and add to the bowl.
Add the coconut oil.
Stir occasionally until the chocolate is completely melted and smooth.
Microwave Method: Place the chocolate and coconut oil in a microwave-safe bowl.
Heat in short bursts (15-30 seconds), stirring in between, until fully melted and smooth.
Combine Ingredients
Once the chocolate is melted, remove it from heat.
Stir in the roasted and popped quinoa until it’s well-coated with the chocolate mixture.
Mold the Chocolate
Pour the chocolate-quinoa mixture into your chocolate molds. Use a spatula to evenly distribute the mixture and fill the molds completely.
Gently tap the molds on the countertop to remove any air bubbles.
Freeze the Chocolate
Place the molds in the freezer for about 30 minutes, or until the chocolate is completely hardened.
Unmold and Store
Once hardened, carefully remove the chocolate from the molds.
