Vegan Momos with Ragi Flour and Spicy Chutney

Ingredients

For the Dough:

  1. 1 cup ragi flour (finger millet flour)
  2. 1/2 teaspoon salt
  3. Water (as needed for kneading)

For the Filling:

  1. 1 1/2 cups cabbage, finely chopped
  2. 1 tablespoon ginger, grated
  3. 2 cloves garlic, minced
  4. 1-2 green chilies, finely chopped (adjust to taste)
  5. Salt and pepper to taste

For the Spicy Momo Chutney:

  1. 2 medium tomatoes, roasted
  2. 1-2 dried red chilies (or to taste)
  3. 1 tablespoon ginger, chopped
  4. 2 cloves garlic
  5. Salt to taste
  6. Fresh cilantro (optional, for garnish)

Instructions

  1. Prepare the Dough:
  2. In a pan, boil water, add salt, and the ragi flour. Using a wooden spatula, mix it well. Let that rest for 20 minutes and knead until you form a smooth and pliable dough.
  3. Prepare the Filling:
  4. In a pan, heat a little oil (if using) over medium heat. Add ginger, garlic, and green chilies, sautéing until fragrant.
  5. Add the chopped cabbage, soy sauce, and season with salt and pepper. Cook until the cabbage is slightly wilted but still crisp. Remove from heat and let cool.
  6. Make the Momos:
  7. Divide the rested dough into small balls (about the size of a golf ball). On a floured surface, roll each ball into a thin circle (approximately 3-4 inches in diameter).
  8. Place a spoonful of the cabbage filling in the center of each circle.
  9. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal. Alternatively, pleat the edges for a traditional look.
  10. Steam the Momos:
  11. Arrange the momos on a steaming plate lined with parchment paper to prevent sticking. Steam for about 15-20 minutes or until the dough is firm and cooked through.
  12. Prepare the Spicy Chutney:
  13. In a blender, combine roasted tomatoes, dried red chilies, ginger, garlic, and salt. Blend until smooth. Adjust seasoning to taste. Optionally, garnish with fresh cilantro.
  14. Serve:
  15. Serve the steamed momos hot with the spicy chutney on the side.
