Vegan Ratatouille

How to make it


Here's a classic recipe for Ratatouille, a delicious vegetable dish originating from Provence, France. This is baked ratatouille recipe inspired from the movie "Ratatouille"


Ingredients


  1. 2 medium eggplants, diced
  2. 2 medium zucchinis, diced
  3. 2 medium tomatoes, diced
  4. 1 bell pepper(red or yellow), diced
  5. 1 medium onion, chopped
  6. 2 cups ripe tomatoes, chopped (or 1 can of diced tomatoes)
  7. 3 cloves garlic, minced
  8. 1/4 cup olive oil
  9. 1 tsp dried thyme
  10. 1 tsp dried basil
  11. Salt and pepper to taste
  12. Fresh basil (for garnish, optional)


Instructions


Prepare the Vegetables:

  1. Cut eggplant in thin roundels. Sprinkle the diced eggplant with salt and let it sit for about 30 minutes to absorb moisture. Rinse and pat dry.
  2. Cut Zucchini and tomato in roundels

Sauce preparation:

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the chopped onions and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the zucchini, bell pepper, and chopped tomatoes.
  5. Add the thyme, basil, salt, and pepper. Mix well.

Simmer:

  1. Cover the skillet and let the mixture simmer for about 10 minutes, stirring occasionally, until all the vegetables are tender and flavors meld.
  2. Taste and adjust seasoning if necessary.
  3. Add to the mixer blender once cooled, blend it until puree. Strain the puree.

Baking:

  1. Pour the tomato sauce layer on the baking tray.
  2. Place the vegetables layers one by one brinjal, tomato, and zucchini, and repeat the same with the rest vegetables.
  3. Pour in more tomato sauce and sink the vegetables.
  4. Bake it at a 160-degree temperature for 20 minutes or until its all cooked.

Serve:

  1. Serve warm, at room temperature, or chilled. Garnish with fresh basil if desired.

  1. Ratatouille can be served as a side dish, over rice or pasta, or even as a filling for crepes or omelets.
  2. It can be made ahead of time and stored in the refrigerator for a few days, as the flavors develop even more.
