Rava Dhokla

How to make it

Ingredients: For the Dhokla

- 1 cup semolina (rava)

- 1 cup plant yogurt

- 1 cup water

- 1 tsp ginger-green chili paste

- 1 tsp lemon juice

- 1 tsp baking soda

- 1 tsp salt (adjust to taste)

- 1 tsp sugar (optional)

- 2 tbsp oil


For Tempering

- 1 tbsp oil

- ½ tsp mustard seeds

- ½ tsp cumin seeds

½ tsp white sesame seeds

- 1-2 green chilies, slit

- 10-12 curry leaves

- 1-2 tbsp chopped coriander leaves (for garnish)

1. Prepare the Batter:

- In a mixing bowl, combine semolina, yogurt, water, ginger-green chili paste, lemon juice, salt, and sugar. Mix well to form a smooth batter. Let it rest for about 15-20 minutes.


2. Prepare the Steamer:

- Fill a steamer pot with water and bring it to a boil. Grease a dhokla tray or a shallow plate with oil.


3. Add Baking Soda:

- After resting, add baking soda to the batter and mix gently. The batter should be slightly thick but pourable.


4. Steam the Dhokla:

- Pour the batter into the greased tray and spread it evenly. Place the tray in the steamer and cover it. Steam for about 15-20 minutes or until a toothpick inserted comes out clean.


5. Temper the Dhokla:

- In a small pan, heat oil for tempering. Add mustard seeds and cumin seeds. Once they splutter, add slit green chilies and curry leaves. Sauté for a minute.


6. Finishing Touches:

- Once the dhokla is done, remove it from the steamer and let it cool slightly. Cut into squares and drizzle the tempering over the dhokla. Garnish with chopped coriander leaves.


7. Serve:

- Serve hot with green chutney and sweet chutney.
