Ingredients

- 2 cups whole wheat flour/all-purpose flour

- 1-2 green chilies (finely chopped) or chili flakes
- 1 tsp crushed seeds
- Salt (to taste)
- Fresh coriander leaves (chopped)
- 1 tbsp oil or butter (for cooking)

Instructions
- Prepare the potatoes:
- Boil the potatoes, and grate the cooled potatoes in a bowl.
- Make the Dough:
- In the same bowl, add chopped coriander, salt, chili flakes, green chillies, crushed cumin seeds, and salt. Gradually add water and knead to form a smooth dough. Cover and let it rest for 20-30 minutes.
- Assemble the Parathas:
- Divide the dough and filling into equal portions.
- Roll a portion of dough into a small circle and flatten gently.
- Roll it out into a circle about 6-7 inches wide.
- Cook the Parathas:
- Heat a tawa or skillet. Cook the paratha on medium heat, flipping it once. Apply oil or butter on both sides and cook until golden brown.
- Serve:
- Serve hot with plant yogurt, pickles, or your choice of curry.
