How to make it

One-Pot Sambar Sadam

Ingredients

  1. For Sambar:
  2. 1 cup rice
  3. 1/2 cup split yellow moong dal (lentils)
  4. 1 cup pumpkin, diced
  5. 1 cup drumstick, cut into pieces
  6. 1 cup brinjal (eggplant), diced
  7. 1 onion, chopped
  8. 2 tomatoes, chopped
  9. 2-3 green chilies, slit
  10. 1 tbsp sambar powder
  11. 1/2 tsp turmeric powder
  12. Salt to taste
  13. 2-3 cups water
  14. 1-2 tbsp oil or ghee
  15. Fresh coriander for garnish
  16. For Tempering:
  17. 1 tsp mustard seeds
  18. 1 tsp cumin seeds
  19. 2-3 dried red chilies
  20. A pinch of asafoetida

Instructions

  1. Cook the Dal:
  2. Rinse the moong dal and rice separately. In a pressure cooker, add the moong dal, rice, and 2-3 cups of water. Cook for 3-4 whistles and let it cool.
  3. Prepare Vegetables:
  4. In another pan, heat oil or ghee. Add mustard seeds, cumin seeds, dried red chilies, and asafoetida. Once they splutter, add chopped onions and green chilies. Sauté until translucent.
  5. Add Tomatoes and Spices:
  6. Add chopped tomatoes, sambar powder, turmeric powder, and salt. Cook until tomatoes are soft.
  7. Incorporate Vegetables:
  8. Add diced pumpkin, drumstick, and brinjal. Pour a little water and cover. Cook until vegetables are tender.
  9. Combine Rice and Dal:
  10. Add the cooked rice and dal mixture to the vegetable mix. Stir well to combine, adding more water if needed to achieve the desired consistency.
  11. Simmer:
  12. Let it simmer for about 5-10 minutes, allowing flavors to meld. Garnish with fresh coriander.
  13. Serve:
  14. Serve hot with papad or pickle.
