Ingredients

2 large potatoes, boiled and mashed
1 cup green peas (fresh or frozen)
1 medium onion, finely chopped

Instructions

Prepare the Filling:
In a pan, heat the oil over medium heat. Add cumin seeds and let them splutter.
Add the chopped onions and green chilies, sautéing until the onions turn translucent.
Stir in the garlic and sauté for a minute until fragrant.
Add the boiled and mashed potatoes, green peas, turmeric, garam masala, coriander powder, and salt. Mix well.
Cook for 3-4 minutes until everything is well combined. Remove from heat, then add lemon juice and garnish with chopped cilantro. Let it cool.
Prepare the Puff Pastry:
Preheat your oven to 400°F (200°C).
Roll out the puff pastry sheets on a lightly floured surface. Cut into squares or rectangles, depending on your preference (typically 4x4 inches).
Assemble the Puffs:
Place a spoonful of the potato-and-pea filling in the center of each square.
Fold the pastry over the filling to form a triangle or rectangle. Press the edges together to seal, using a fork to crimp the edges if necessary.
Bake:
Place the assembled puffs on a baking tray lined with parchment paper. If using, brush the tops with beaten egg or plant-based milk for a golden finish.
Bake in the preheated oven for 15-20 minutes or until golden brown and puffed up.
