How to make it

Ingredients

  1. For the Pulao:1 cup soya chunks (dry)
  2. 1.5 cups basmati rice (soaked for 30 minutes)
  3. 2-3 cups water (for cooking)
  4. 2 tablespoons oil or ghee
  5. 1 medium onion, thinly sliced
  6. 1-2 green chilies, slit
  7. 1 teaspoon ginger-garlic paste
  8. 1 medium tomato, chopped
  9. 1-2 teaspoons garam masala
  10. 1-2 bay leaves
  11. 4-5 cloves
  12. 2-3 green cardamoms
  13. 1-2 cinnamon sticks
  14. Salt to taste
  15. Fresh coriander leaves for garnishing

Instructions

  1. Prepare the Soya Chunks:
  2. Boil water in a pot. Add the soya chunks and cook for about 5-7 minutes until they become soft. Drain and rinse under cold water. Squeeze out excess water and set aside.
  3. Cook the Rice:
  4. Drain the soaked rice.
  5. In a large pan, heat oil. Add bay leaves, cloves, cardamom, and cinnamon. Sauté for a few seconds until fragrant.
  6. Add sliced onions and sauté until golden brown. Then, add green chilies and ginger-garlic paste, stirring for another minute.
  7. Add chopped tomatoes and cook until they become soft.
  8. Combine Ingredients:
  9. Stir in cooked soya chunks and garam masala. Mix well to ensure that the chunks absorb the flavors.
  10. Add the drained rice to the mixture, along with salt. Gently fold everything together.
  11. Pour in the water (1.5 cups for every cup of rice), and stir lightly.
  12. Cook the Pulao:
  13. Bring to a boil. Once boiling, reduce the heat to low, cover with a lid, and cook for about 15-20 minutes, or until the rice is cooked and water is absorbed.
  14. Turn off the heat and let it rest for 5-10 minutes before opening the lid.
  15. Serve:
  16. Fluff the pulao with a fork, garnish with fresh coriander leaves, and serve hot with raita or salad.
