Litti Chokha

How to make it

Ingredients

For Litti:

  1. 2 cups whole wheat flour
  2. 1 cup roasted sattu (gram flour)
  3. 2 tablespoons mustard oil
  4. Spices: Ajwain (carom seeds), salt
  5. Water (for dough)

For Litti filling:

  1. 1 small onion, finely chopped
  2. 1/2 cup chopped cilantro
  3. 1 tsp garlic and ginger finely chopped
  4. 1-2 green chilies, finely chopped (optional)
  5. 1 tsp Indian pickle (Acchar mango and garlic)
  6. Salt to taste
  7. 1 tablespoon oil or ghee (for cooking)

For Chokha:

  1. 1 large eggplant
  2. 1 large tomato
  3. 2 medium potatoes
  4. 1 tsp garlic and ginger finely chopped
  5. 1 onion (finely chopped)
  6. 2 green chilies (finely chopped)
  7. 2 tablespoons mustard oil
  8. Salt to taste

Instructions for littlit:

  1. Prepare the Dough:
  2. In a mixing bowl, combine whole wheat flour, sattu, and salt.
  3. Gradually add water and knead until a soft dough forms. Cover and let it rest for 30 minutes.
  4. Make the Filling:
  5. In a bowl, add chopped onions, green chilies, garlic, ginger & cilantro.
  6. Add in aachar (pickle) and salt. Mix that well and keep it aside.
  7. Assemble the Littli.
  8. Divide the dough into small balls. Roll out each ball into a small circle.
  9. Place a spoonful of the filling in the center. Bring the edges together and seal tightly.
  10. Gently flatten the stuffed ball and roll it out carefully into a disc.
  11. Cook the Litti:
  12. Airfy at 160 degrees celsius for 20 minutes. Turn in between until cooked through.
  13. Serve:
  14. Serve hot with vegan yogurt, pickle, or chutney.

Instructions

  1. Roast the Vegetables:
  2. Eggplant: Roast the eggplants directly over an open flame or in the oven until the skin is charred and the flesh is soft. Let them cool, then peel off the charred skin.
  3. Potatoes: Boil the potatoes until tender. Peel and mash them.
  4. Tomatoes: If desired, roast the tomatoes until the skin is blistered, or you can simply chop them fresh.
  5. Prepare the Chokha:
  6. In a large mixing bowl, combine the roasted and peeled eggplant, mashed potatoes, and chopped tomatoes.
  7. Add finely chopped onion, minced garlic, minced ginger, green chilies, and salt.
  8. Drizzle mustard oil over the mixture and mash everything together with a fork or your hands until well combined.
  9. Garnish:
  10. Garnish with fresh coriander leaves.
