Spinach Corn Savory Puff Pastry
Ingredients
For the Creamy Spinach Corn Sauce:
- 2 cups fresh spinach (washed and chopped)

- 80-100 grams tofu (soft or silken)
- Water (as needed for blending)
For the Puff Pastry:
- 1 package of store-bought puff pastry sheets (2 sheets)
- 1 tsp maple syrup and plant-based milk (for egg wash, optional)
Instructions
- Prepare the Creamy Spinach Corn Sauce:
- In a small pan, sauté the minced garlic until fragrant.
- Add the fresh spinach and cook until wilted. Add the corn and cook for another 2-3 minutes.
- In a blender, combine the soaked cashews, nutritional yeast, and tofu. Blend until smooth, adding water as needed to achieve a creamy consistency.
- Mix the blended tofu & cashew cheese in the saucepan along with chili flakes, Italian herbs, salt, and pepper. Remove from heat and let cool.
- Prepare the Puff Pastry:
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry sheets on a lightly floured surface. Cut into squares or rectangles, about 4x4 inches.
- Assemble the Puffs:
- Place a spoonful of the creamy spinach corn filling in the center of each square.
- Fold the pastry over to form a triangle or rectangle. Seal the edges using a fork or by pressing them together with your fingers.
- Bake:
- Place the assembled puff pastries on a baking tray lined with parchment paper. If using, brush the tops with beaten egg or plant-based milk for a golden finish.
- Bake in the preheated oven for 15-20 minutes or until golden brown and flaky.
- Serve:
- Enjoy warm as a snack or appetizer. They can be served with a side of dipping sauce or chutney.
