Spinach Corn Savory Puff Pastry

Ingredients

For the Creamy Spinach Corn Sauce:

  1. 2 cups fresh spinach (washed and chopped)
  2. 1 cup corn (fresh or frozen)
  3. 1/4 cup nutritional yeast
  4. 1/4 cup cashews (soaked for at least 2 hours)
  5. 2 cloves garlic (minced)
  6. 1/2 teaspoon chili flakes (adjust to taste)
  7. 1 teaspoon Italian herbs
  8. Salt and pepper to taste
  9. 80-100 grams tofu (soft or silken)
  10. Water (as needed for blending)

For the Puff Pastry:

  1. 1 package of store-bought puff pastry sheets (2 sheets)
  2. 1 tsp maple syrup and plant-based milk (for egg wash, optional)

Instructions

  1. Prepare the Creamy Spinach Corn Sauce:
  2. In a small pan, sauté the minced garlic until fragrant.
  3. Add the fresh spinach and cook until wilted. Add the corn and cook for another 2-3 minutes.
  4. In a blender, combine the soaked cashews, nutritional yeast, and tofu. Blend until smooth, adding water as needed to achieve a creamy consistency.
  5. Mix the blended tofu & cashew cheese in the saucepan along with chili flakes, Italian herbs, salt, and pepper. Remove from heat and let cool.
  6. Prepare the Puff Pastry:
  7. Preheat your oven to 400°F (200°C).
  8. Roll out the puff pastry sheets on a lightly floured surface. Cut into squares or rectangles, about 4x4 inches.
  9. Assemble the Puffs:
  10. Place a spoonful of the creamy spinach corn filling in the center of each square.
  11. Fold the pastry over to form a triangle or rectangle. Seal the edges using a fork or by pressing them together with your fingers.
  12. Bake:
  13. Place the assembled puff pastries on a baking tray lined with parchment paper. If using, brush the tops with beaten egg or plant-based milk for a golden finish.
  14. Bake in the preheated oven for 15-20 minutes or until golden brown and flaky.
  15. Serve:
  16. Enjoy warm as a snack or appetizer. They can be served with a side of dipping sauce or chutney.
