Sesame Chutney - South Indian Style

Ingredients:

  1. 1 cup roasted sesame seeds
  2. 2 tablespoons tamarind paste (adjust to taste)
  3. 3-4 cloves roasted garlic
  4. 2-3 dried red chilies (adjust for heat)
  5. Salt to taste
  6. Water (as needed for consistency)

Instructions:

  1. Roast the Sesame Seeds: If you haven’t bought pre-roasted sesame seeds, lightly roast them in a skillet over low heat until golden and fragrant. Allow them to cool.
  2. Prepare the Spice Mix: In the same skillet, add the dried red chilies and roast them for about 30 seconds, just until they release their aroma. Allow them to cool.
  3. Blend Ingredients: In a blender, combine the roasted sesame seeds, roasted garlic, tamarind paste, roasted dried red chilies, and salt. Add water gradually to achieve your desired consistency.
  4. Blend Until Smooth: Blend the mixture until smooth, scraping down the sides as needed. Taste and adjust salt or tamarind as desired.
  5. Serve: Transfer to a serving bowl and enjoy with dosa, idli, or as a dip with snacks.
