Heat Oil: In a pan, heat oil over medium heat.
Add vegetables Onions: Add the half-cut onion & tomato.
Add Garlic & Chilli: Add in garlic cloves and cook for another minute until the raw smell disappears. Add the green chillies
Cook Tomatoes: Cook until they soften and remove the tomato skin. Cool that down.
Spice It Up: Add turmeric powder, red chili powder, coriander powder, and salt. Mash all the tomatoes & garlic and cook for a couple of minutes.
Add Peas: Stir in the green peas. If using frozen peas, no need to thaw. Add a little water if needed, cover the pan, and let it cook for about 5-7 minutes.
Finish with Garam Masala: Once the peas are cooked, sprinkle garam masala and mix gently.
Garnish: Turn off the heat and garnish with fresh coriander leaves.
