How to make it
Ingredients
- For Vada:
- 1 cup split Bengal gram (Chana dal)
- 2-3 green chilies
- 1-inch ginger, chopped
- Fennel seeds
- Salt to taste
- Oil for frying
- For Curry:
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2-3 green chilies, slit
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- 2 tbsp oil

Making Vada:
- Soak chana dal in water for 4-5 hours.
- Drain the dal and grind it to a coarse paste with green chilies and fennel seeds. Add salt.
- Heat oil in a pan for frying. Shape the batter into small fritters and fry until golden brown. Drain on paper towels.
Making Curry:
- Heat oil in a pan. Add chopped onions and sauté until golden.
- Add ginger-garlic paste and slit green chilies; sauté for a minute.
- Add the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates.
- Add the fried vadas to the curry and gently mix them in. Simmer for 5-10 minutes.
- Garnish with fresh coriander leaves.
