Vada curry

How to make it

Ingredients

  1. For Vada:
  2. 1 cup split Bengal gram (Chana dal)
  3. 2-3 green chilies
  4. 1-inch ginger, chopped
  5. Fennel seeds
  6. Salt to taste
  7. Oil for frying
  8. For Curry:
  9. 1 onion, finely chopped
  10. 2 tomatoes, pureed
  11. 2-3 green chilies, slit
  12. 1 tsp ginger-garlic paste
  13. 1/2 tsp turmeric powder
  14. 1 tsp red chili powder
  15. 1 tsp garam masala
  16. Salt to taste
  17. Fresh coriander leaves for garnish
  18. 2 tbsp oil

Making Vada:

  1. Soak chana dal in water for 4-5 hours.
  2. Drain the dal and grind it to a coarse paste with green chilies and fennel seeds. Add salt.
  3. Heat oil in a pan for frying. Shape the batter into small fritters and fry until golden brown. Drain on paper towels.

Making Curry:

  1. Heat oil in a pan. Add chopped onions and sauté until golden.
  2. Add ginger-garlic paste and slit green chilies; sauté for a minute.
  3. Add the tomato puree, turmeric powder, red chili powder, and salt. Cook until the oil separates.
  4. Add the fried vadas to the curry and gently mix them in. Simmer for 5-10 minutes.
  5. Garnish with fresh coriander leaves.
