Kaju Katli, is a popular Indian sweet made primarily from cashew nuts (kaju) and sugar. It is a type of fudge that has a smooth, melt-in-the-mouth texture. Here are some key features of Kaju Katli:


Ingredients

The main ingredients are (20g per piece, 92 calories in each)

  1. 2 cup cashew nuts (kaju)
  2. 1/2 cup powdered sugar (adjust to taste)
  3. 1/4 teaspoon cardamom powder (optional)
  4. 1 tablespoon almond milk
  5. Almonds or silver leaf (optional, for garnishing)
  6. vegan ghee for greasing


Instructions


  1. Place the cashews in a blender or food processor. Pulse until you get a fine powder. Do not make cashew butter.
  2. Combine the cashew powder, powdered sugar, and cardamom powder in a mixing bowl. Mix well until evenly combined.
  3. Add almond milk and combine until it forms a dough.
  4. Grease your hands with a little ghee. If it feels too dry, add a few drops of water or ghee to help it come together.
  5. Divide in half, and mix matcha powder in one portion.
  6. Take small portion of each to form a ball shape
  7. Place the dough in the mooncake mould, and plunge the pistol downward.
  8. The dough will take the shape of the mold, and the pattern will be imprinted on the surface.
  9. Plunge the mould down lightly to the dough repeatedly for at least seven to ten times to get a perfect shape. Otherwise, the mooncake will look lopsided and with a blurred pattern.
  10. Place silver leaf on top of each piece.
  11. Allow the Kaju Katli to set for a few hours. You can refrigerate it for a firmer texture.
