Instructions

Place the cashews in a blender or food processor. Pulse until you get a fine powder. Do not make cashew butter.
Combine the cashew powder, powdered sugar, and cardamom powder in a mixing bowl. Mix well until evenly combined.
Add almond milk and combine until it forms a dough.
Grease your hands with a little ghee. If it feels too dry, add a few drops of water or ghee to help it come together.
Divide in half, and mix matcha powder in one portion.

Place the dough in the mooncake mould, and plunge the pistol downward.
The dough will take the shape of the mold, and the pattern will be imprinted on the surface.
Plunge the mould down lightly to the dough repeatedly for at least seven to ten times to get a perfect shape. Otherwise, the mooncake will look lopsided and with a blurred pattern.
Place silver leaf on top of each piece.
Allow the Kaju Katli to set for a few hours. You can refrigerate it for a firmer texture.
