How to make it

Ingredients (Serves 4)

Mango + base

  1. Ripe mango pulp: 2 cups (about 3 medium-large mangoes)
  2. Oil (groundnut preferred): 2 tbsp
  3. Mustard seeds: 1 tsp
  4. Cumin seeds: 1/2 tsp
  5. Hing: a pinch (optional)
  6. Green chili: 1 (optional)
  7. Turmeric: 1/2 tsp
  8. Red chili powder: 1/2 to 1 tsp (adjust)
  9. Coriander powder: 2 tsp
  10. Garam masala: 1/2 tsp (optional)

Soy yogurt sauce (finish)

  1. Plain soy yogurt: 1 cup (unsweetened)
  2. Sugar or jaggery: 1–2 tsp (optional; depends on mango sweetness)
  3. Salt: to taste
  4. Water: 1/4 to 1/2 cup (to adjust thickness)
  5. Lemon juice: 1–2 tsp (optional, for extra tang)

Garnish

  1. Coriander leaves: 2 tbsp chopped

Step-by-Step Detailed Method

1) Prep (mango + protein)

  1. Blend mango pulp lightly so it’s smooth (keep some texture if you like).
  2. In a bowl, whisk soy yogurt until smooth add in chickpea flour, jaggery powder, and mango pulp.

2) Make Gujarati mango masala

  1. Heat oil in a pan on medium heat.
  2. Add mustard seeds; when they crackle add cumin seeds and hing.
  3. Add turmeric, red chili powder, coriander powder. Stir for 30 seconds until aromatic.
  4. Add in the mixed mixture and stir well.
  5. Simmer 5–8 minutes until the mixture thickens slightly.

Taste check now: mango tang + sweetness balance. Add jaggery/sugar if needed.

If it looks too tangy, add 1 tsp jaggery.
If it’s too thick, add water little by little.

4) Finish & garnish

  1. Turn off flame.
  2. Add lemon juice (optional) and garam masala (optional).
  3. Garnish with coriander leaves.
  4. Rest 5 minutes—flavors settle.

  1. With phulka/rotli
  2. With khichdi
  3. As a side with thepla
  4. Or with plain rice
