2 large zucchinis
1 cup vegan ricotta cheese
1/4 cup vegan parmesan cheese powder
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper

2 tablespoons olive oil
2 cloves garlic, minced
1 can (14 oz) crushed tomatoes
1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)

Instructions

Prepare the Zucchini:

Use a vegetable peeler or mandoline to slice the zucchinis lengthwise into thin strips. You’ll need about 20 strips.
Sprinkle the zucchini slices lightly with salt and let them sit for about 10 minutes to draw out excess moisture.
Pat dry with paper towels.

Vegan Ricotta:

50-gram tofu, handful of cashew, salt

Make the Filling:

Mix the vegan ricotta, Blanched and chopped spinach, lemon zest and, cranberry in a bowl until well combined.

Assemble the Ravioli:

Lay out 4 zucchini strips on a clean surface. Place about 1 tablespoon of the cheese mixture at one end of each strip.
Fold the other end of the zucchini over the filling to create a ravioli shape. Press the edges to seal.

Prepare the Sauce:

In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Let it simmer for about 10 minutes.
Reduce the heat add the prepared Zucchini ravioli and top it up with Vegan Parmesan cheese powder, basil leaves (if using) cook for another 15 minutes.

Serve:

Plate the zucchini ravioli and top with additional sauce. Garnish with fresh basil or parsley and extra Parmesan cheese if desired.
